Late Summer Bottling

Once the wine is fully stable, filtered and sulfited about 10 ppm extra for oxygen uptake during bottling; it is ready for bottling.

Bottling Viognier Under Vacuum

A vacuum bottler allows for minimal oxygen uptake during bottling by having the bottle under vacuum (less air) and having the wine wick down the side of the bottle for minimal aggitation during filling.

Bottling Under Vacuum

The bottling process is pretty straight forward, the most important aspect outside of sterilization is setting the level of the wine such that once the cork is insterted there is the proper amount of head space. Proper headspace amounts to about 1/4 to 1/2 inch between the wine level and the bottom of the cork, which ensures proper bottle aging.
